Low Deuterium Keto Lamb Grass-Fed One Pan 15 Minutes
Golden, tender grass-fed lamb chops basted in a garlic and rosemary butter. A fast, impressive low deuterium dinner, built from ingredients that are naturally low in deuterium. Fifteen minutes, one pan, restaurant on a plate.

Lamb is a natural fit for a low deuterium diet, especially when it is grass-fed and grass-finished. A fatty, forage-fed meat carries no sugar and no starch, and the marbling that makes a good lamb chop so delicious is exactly the part you want to keep. Add a garlic-herb butter and you have a meal that feels indulgent and takes almost no time to put together.

Why This Is a Low Deuterium Recipe

Lamb chops start out well suited to a low deuterium diet, so the choices are about picking the best version of each ingredient.

Standard choice Low deuterium choice Why
Grain-finished lamb Grass-fed, grass-finished lamb The animal is finished on forage rather than grain
Seed or vegetable oil Grass-fed butter or ghee A low-deuterium fat that sears beautifully and makes the basting butter
Potatoes or a starchy side Low-deuterium greens Keeps the whole plate low in starch

Ingredients

  • 8 grass-fed lamb loin or rib chops
  • 2 tbsp grass-fed butter or ghee
  • 4 cloves garlic, lightly smashed
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Sea salt and black pepper, to taste
  • Lemon wedges, to serve

Instructions

  1. Prepare the chops. Pat the lamb chops very dry with paper towel and season generously on both sides with salt and pepper. Dry meat is the key to a proper golden crust.
  2. Heat the pan. Warm a large heavy skillet over medium-high heat and add 1 tbsp of the butter. Once it is foaming, lay the chops in the pan without crowding them.
  3. Sear. Cook for 2 to 3 minutes on each side for medium-rare, a little longer if you prefer them more done. Sear the fatty edge too, holding the chops on their side for a minute to render and crisp it.
  4. Baste. Lower the heat to medium, add the remaining butter, the garlic, rosemary and thyme. Tilt the pan and spoon the fragrant butter over the chops for a minute.
  5. Rest and serve. Transfer the chops to a plate and let them rest for 5 minutes so the juices settle. Serve with the pan butter spooned over and a squeeze of lemon.
Low Deuterium tip Cook any green side, such as steamed broccoli or cauliflower mash, using deuterium-depleted water. The lamb and butter are already low in deuterium, so the water you cook your sides in is the easiest place to lower the deuterium content of the meal a little further.

Why Grass-Fed Lamb Is a Great Choice

The quality of the lamb is the swap that matters most. Grass-fed and grass-finished lamb is raised and finished on forage rather than grain, and it is the choice used throughout this series.

Serving Suggestions

These chops are wonderful with buttered greens, a crisp rocket salad dressed in olive oil and lemon, or a bowl of cauliflower mash to soak up the garlic butter. A side of sauteed mushrooms cooked in the same pan makes the most of every drop of flavour.

Storage and Meal Prep

Leftover chops keep in an airtight container in the fridge for up to 3 days and are delicious sliced cold over a salad. To reheat, warm them gently in a covered pan over low heat with a little extra butter, taking care not to overcook, as lamb is best not pushed past your original doneness.
